For the eggplant parm:

  • 3 tablespoons melted butter
  • 1 cup Italian breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 eggplant
  • 1 egg, beaten
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
